Spice of the week: French Tarragon (week of 21-25 June 2010)

tarragonTarragon is easy to grow and only wants sunlight and not too much water. Fresh tarragon is always handy in your kitchen, as it's delicate flavour is lovely in scrambled eggs and even white rice. In place of dill butter on baked fresh fish, substitute fresh tarragon for a new dimension of taste. If you take the time to make hollandaise sauce for your Eggs Benedict, try chopping some fresh tarragon very finely and adding it to the mix for added flavour. Or, add it to your basic chicken salad, along with some diced apples.

How to Use a Stove-Top Espresso Maker

OK. Working from home, it is easy to get distracted and sleepy during the day. One is always too near to the bedroom, which conveniently has a nice bed and a TV, not to mention energydrink_redbull_sugarfree.jpgA/C. Sleeping at 1PM does not make for a progressive day, so sometimes it is necessary to get a quick jump-start. Red Bull (sugar-free) can be my best friend. So are Lo-Carb Monster and sugar-free Sobe Adrenaline Rush, although these two are much too big to drink all at once. But I digress.

Seeing as how I have finished a whole case of Red Bull in too short of a time to be healthy, it seems the only thing to drink is coffee, iced or nothing. Since I have no clue how to work a coffee maker, I figure the next best thing is to attempt to use the stove-top espresso maker.

France and Martinique shares so many similarities in their cuisine and if you have ever visited both of these countries you will clearly understand.  On a trip with some friends to St. Lucia a few years ago we took a short flight to Martinique and spent a few days touring the island and enjoying some to the best ‘creole’ cuisine, baked goods and delightful wines.  We went to dinner at a former plantation house which was converted into an upscale gourmet restaurant and we only had one request when the Maitre d’ came to take our order, it was a simple request…‘Ask the chef to provide us with his favorite dishes’.

caribbeanmap_martiniqueDuring dinner I couldn’t help but think about how ‘the joys of the table’ in France was everyday conversation, it is talked about everywhere, on the trains, in stores, in the office and at school.  Mealtimes are sacrosanct – one thing that you will notice that at one o’clock, the traffic in France and Martinique suddenly becomes much lighter.  Family meals are an occasion.  An everyday event becomes a celebration of one of life’s most basic pleasures and special occasions, birthdays and holidays are lavishly enjoyed with food and wine.
